Peabody Muffins - cooking recipe

Ingredients
    2 c. flour
    1 c. sugar
    2 tsp. baking powder
    1/4 tsp. salt
    2 Tbsp. butter, melted and cooled
    1 c. milk
    1 egg
    1 1/2 tsp. vanilla
Preparation
    Preheat oven to 400 degrees.
    Grease muffin tins well.
    Sift flour with sugar, baking powder, and salt into a large bowl.
    Add melted butter to egg and milk.
    Beat to mix well; add vanilla. Make a well in the center of the flour mixture.
    Pour milk mixture into the bowl all at once.
    Stir with a fork until all ingredients are moistened.
    CAUTION: DO NOT beat or overmix.
    Quickly spoon batter into muffin tins, filling each slightly more than half full.
    Bake 18 to 20 minutes for a full size muffin pan.
    Remove and serve hot.
