Easy Leek Soup For Two - cooking recipe

Ingredients
    1 leek (use everything except the dark green outer leaves)
    2 c. water
    1 chicken bouillon cube
    1 medium white potato, peeled and diced
    1 small onion, peeled and diced
Preparation
    Cut leek into 1-inch sections and cut each section lengthwise so that you can wash away all sand.
    Combine all ingredients in a medium saucepan; cover and bring to a boil.
    Uncover; reduce heat and simmer for 20 minutes or until vegetables are soft.
    Puree in blender until creamy.
    Makes 2 servings.
