Basic Meat Stock - cooking recipe

Ingredients
    2 lb. veal or beef bones
    oil
    2 large carrots
    2 celery stalks
    1 onion, cut in half (with skin left on) and stuck with 3 cloves
    2 qt. cold water
    2 bay leaves
    salt
    peppercorns
    pinch of leaf thyme, crumbled
    3 Tbsp. tomato puree
Preparation
    Rub the veal or beef bones with oil; place in a 400\u00b0 oven for 20 minutes.
    Rub the carrots, celery and onion with oil.
    Roast everything for 20 minutes, until it is a rich, dark brown.
    Remove from the oven.
    Place in a pot with the remaining ingredients. Bring to a boil.
    Skim off foam; simmer 3 to 4 hours to reduce by one-third.
    Strain and freeze.
