Potato Candy(Or Poor Man'S Candy) - cooking recipe

Ingredients

1 large potato
3 to 5 boxes confectioners sugar
peanut butter
1 Tbsp. vanilla

Preparation

Boil potato.
Remove skin.
Add vanilla.
Add sugar until you make a dough (depends on amount of water in potato).
Roll out with rolling pin (use sugar to dust surface).
Spread with peanut butter.
Roll into jelly roll (about 1 1/2-inch roll).
Slice in 1/4-inch bars.
