Oyster Parmesan With Caper Butter - cooking recipe

Ingredients
    48 oysters
    grated Parmesan cheese
    4 eggs, beaten
    4 Tbsp. cream
    fine bread crumbs
Preparation
    Thoroughly dry oysters and roll them in grated Parmesan.
    Dip them in a mixture of eggs with cream and then in bread crumbs. Put the oysters on absorbent paper on a rack to allow the coating to set.
    Melt enough butter in a skillet to cover the bottom to about 1/4-inch and in it, saute the oysters for about 2 minutes on each side, or until they are lightly browned and just beginning to crisp.
