Italian Meat Loaf - cooking recipe

Ingredients
    1 1/2 to 2 lb. ground chuck
    2 beaten eggs
    1 c. soft bread crumbs (2 to 3 slices)
    1/2 c. tomato juice
    2 Tbsp. parsley flakes
    1/2 tsp. oregano
    1/4 tsp. salt
    1/4 tsp. pepper
    1/2 lb. ham, sliced very thin
    1 pkg. Mozzarella cheese (save 1 slice for top)
Preparation
    Combine ingredients except ham and cheese.
    Spread mixture on a 10 x 12-inch sheet of wax paper.
    Arrange ham on top, leaving a small space around edge.
    Place cheese on top of ham.
    Starting from short end, roll up jelly-roll style.
    Seal ends and edges. Place seam side down in baking pan.
    Bake at 350\u00b0 for 1 1/4 hours. Place rest of cheese on top; cut in triangles.
    Return to oven about 5 minutes until cheese melts.
