Low Calorie Blueberry Muffins - cooking recipe

Ingredients
    3/4 c. flour
    3/4 c. whole wheat flour
    1/4 c. granulated sugar
    2 tsp. baking powder
    1/4 tsp. salt
    1 large egg, beaten
    1/2 c. skim milk
    2 Tbsp. margarine, melted
    1 c. blueberries
    1/4 tsp. freshly grated lemon peel
Preparation
    Heat oven to 375\u00b0.
    Use paper baking cups in muffin pan.
    Beat egg with fork or whisk in small bowl.
    Whisk in milk and butter. Pour over dry ingredients.
    Add berries and lemon peel.
    Fold in with rubber spatula, just until ingredients are moist.
    Scoop batter into muffin cups.
    Bake 15 to 20 minutes, or until lightly browned.
    Cool 5 minutes before removing from pan.
