Mom'S Carrot Cake - cooking recipe
Ingredients

2 1/4 c. sugar (can be less)
2 c. water
2 1/4 c. grated carrots
1 c. raisin
1 1/2 Tbsp. lard or butter
3 c. flour
3 tsp. baking soda
1 tsp. salt
1 tsp. each: cloves, cinnamon, nutmeg or apple pie spice
1 c. applesauce
1 c. chopped nuts
Preparation

Mix the first 5 ingredients and bring to boil.
Turn down to simmer 20 minutes.
Remove from heat and let cool to room temperature.
This is a must.
In a large bowl mix the dry ingredients.
Now fold liquid mixture into dry ingredients.
Mix with spoon until well mixed.
Add applesauce and nuts.
Put mixture in Bundt pan and bake for 1 1/2 hours (or until toothpick is clean).
