Sweet Potato Royal - cooking recipe

Ingredients

5 or 6 sweet potatoes
1/2 c. firmly packed brown sugar
1/2 c. applesauce
1/4 c. melted butter
2 tsp. vanilla
3/4 c. flaked coconut
20 large marshmallows

Preparation

Cook sweet potatoes, drain and mash. Combine first five ingredients and
spoon into a buttered casserole dish. Bake at 325 degrees for 25 minutes. Remove from oven and sprinkle with coconut. Arrange marshmallows on top and bake 10 to 15 minutes longer until marshmallows are golden brown.
