Maple Oatmeal Cookies(Makes 42 Cookies) - cooking recipe

Ingredients
    1 1/3 c. quick-cooking oats
    3/4 c. whole-wheat pastry flour
    2/3 c. sugar
    1/2 tsp. baking soda
    1/2 tsp. baking powder
    1/2 tsp. ground cinnamon
    1/4 c. maple syrup
    1 large egg, lightly beaten
    1 Tbsp. water or orange juice
    3 Tbsp. canola oil
    1 tsp. vanilla extract
    3/4 c. chopped walnuts or pecans
    1/2 c. plus 1 Tbsp. chopped mixed dried fruit, apricots, raisins or prunes
Preparation
    Combine the oats, flour, sugar, baking soda, baking powder and cinnamon in a large bowl and stir to mix well.
    Add the maple syrup, egg, water or juice, canola oil and vanilla extract and stir to mix well.
    Stir in the nuts and fruit.
    Coat a large baking sheet with nonstick cooking spray and drop rounded teaspoonful of the dough onto the sheet, spacing them at least 1-inch apart. Flatten each cookie slightly with the tip of a spoon.
    Bake the cookies at 300\u00b0 for about 14 minutes or until the cookies have spread and appear dry around the edges.
    (They will not brown significantly during baking.)
    Remove the cookies from the oven and cool on the sheet for 3 minutes.
    Then transfer the cookies to wire racks to cool completely.
    Serve immediately or transfer to an airtight container until ready to serve.
