Braised Fresh Beef Tongue - cooking recipe

Ingredients
    1 beef tongue (about 4 lb.)
    1/4 c. chopped onion
    1/4 c. chopped celery
    1/2 c. chopped carrots
    3 Tbsp. butter
    3 Tbsp. flour
    3 c. tongue water
    1 tsp. Worcestershire sauce
    salt and pepper to taste
    1/4 c. chopped sour pickles
Preparation
    Wash, then cover the tongue with boiling water and simmer for 2 hours.
    Remove the skin and trim.
    Place the tongue in a deep casserole with the onion, celery and carrot.
