Microwave Lasagna Rolls(Serves 3) - cooking recipe
Ingredients

4 uncooked lasagna noodles
1 (10 oz.) frozen chopped spinach, thawed
1 egg
1 c. cottage cheese
1 c. shredded Mozzarella
1/2 tsp. oregano
1/2 tsp. basil
dash of garlic powder
1 (8 oz.) can tomato juice
Preparation

Cook noodles; drain.
Drain spinach.
Combine egg, spinach, cottage cheese, half of the Mozzarella cheese, oregano, basil and garlic.
Spread the spinach-cheese mixture evenly on the four lasagna noodles.
Loosely roll each noodle, jelly roll style, starting with short edge.
Place seam-side down in microwave-safe dish.
You can refrigerate at this point until ready to serve. Pour tomato sauce over rolls.
Cook, covered, for 10 to 12 minutes on High in microwave.
Sprinkle with remaining Mozzarella.
Cover and let stand 5 minutes.
