Roast Beef Repose - cooking recipe

Ingredients
    1 standing rib roast
Preparation
    Have rib roast at room temperature; season as you like. Preheat oven to 375\u00b0.
    Place rib side down in pan.
    Put into oven for 1 hour, then turn off heat.
    Do not open door.
    Forty minutes before you wish to serve the roast, turn oven on to 375\u00b0 and let roast get piping hot.
    Takes about 40 minutes.
    Roast will be rare and juicy, if more doneness is desired, cook for 55 to 60 minutes more.
