Vichyssoise Or Leek-Potato Soup - cooking recipe

Ingredients
    3 leeks (white part only)
    1 medium onion
    2 Tbsp. butter
    4 medium potatoes, pared and sliced fine
    4 c. chicken broth
    1 to 2 c. coffee cream
    salt and white pepper
    chopped chives
Preparation
    Mince leeks and onion and saute in butter for 3 minutes.
    Add potatoes and chicken broth.
    Simmer, covered, for about 15 minutes or until tender.
    Put vegetables through food mill or blender. Return puree to broth.
    Remove from heat.
    Add cream; salt and pepper to taste.
    Serve hot or cold.
    Top with chopped fresh chives.
