Ingredients

1 (16 oz.) can beets, diced or sliced
1 (8 oz.) can pineapple chunks (unsweetened)
1/4 c. lemon juice
2 Tbsp. cornstarch
1/2 tsp. salt
1/4 tsp. pepper
Preparation

Heat beets in their own juice.
Add drained pineapple chunks and heat until simmering.
Retain liquid.
Stir pineapple liquid, lemon juice and cornstarch together.
Stir into simmering beets. Stir and cook until thickened.
Serves 6.
