Creole Rice - cooking recipe

Ingredients
    1 c. long grain rice
    3/4 c. onion, diced
    1 c. water
    2 tsp. vegetable oil
    2 ribs celery, peeled and diced
    2 tsp. fresh lemon juice
    1/2 tsp. hot red pepper sauce
    black pepper to taste
    2/3 c. red pepper, stemmed, seeded, de-ribbed and diced
    2 c. canned Italian plum tomatoes with juice, chopped
    3 cloves garlic, smashed, peeled and sliced
Preparation
    Place red pepper, onion, celery, garlic and vegetable oil in a 13 x 9 x 2-inch oblong pan and stir to combine.
    Cook, uncovered, on High in microwave for 4 minutes.
    Remove from oven; stir in rice, tomatoes and juice, hot pepper sauce and water.
    Cook, uncovered, for 25 minutes, stirring 3 times, on High in microwave. Remove from oven.
    Stir in lemon juice and black pepper to taste. Serve hot.
    Serves 8.
