Apricots With Curried Pork Chops - cooking recipe

Ingredients
    8 small center cut pork chops
    1 yellow onion
    1/4 c. butter or margarine
    1/4 c. all-purpose flour
    1 tsp. salt
    1 tsp. curry powder
    1/4 tsp. pepper
    2 c. milk
    1/2 lb. fresh mushrooms, sliced
    8 drained canned apricot halves
Preparation
    Brown chops quickly on both sides in skillet.
    Put in casserole.
    Saute onion in butter for 5 minutes.
    Blend in flour and seasonings.
    Gradually stir in milk and cook, stirring constantly, until thickened.
    Add mushrooms.
    Pour over chops. Cover and bake in preheated moderate oven at 350\u00b0 for 1 hour or until chops are tender.
    Top with apricot halves.
    Serve with rice.
    Makes 4 servings.
