Fiesta Beans - cooking recipe

Ingredients
    2 lb. pink beans
    1 to 1 1/2 lb. salt pork
    3 to 4 garlic cloves
    3 to 4 medium onions, slivered
    2 Tbsp. vegetable oil
    1 large plus 1 small can tomatoes
    4 Tbsp. sugar
    2 Tbsp. chili powder
    4 Tbsp. vinegar
    2 Tbsp. Worcestershire sauce
    1 or more tsp. crushed red chilies
    1/4 lb. Cheddar cheese, grated
Preparation
    Pick over and rinse beans.
    Place in large pot and cover with water so that water is about 2 inches over top of beans.
    Mince garlic; cut salt pork into 1/4 x 1/4 x 1-inch pieces and add both to beans.
    Bring to boil and simmer until tender (2 to 4 hours).
