Sweet Potato Muffins - cooking recipe
Ingredients

1 c. sugar
1 1/4 c. mashed cooked sweet potatoes
1/4 stick margarine at room temperature
2 large eggs at room temperature
1 1/2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 c. milk
raisins and chopped nuts, as desired (may grind nuts)
Preparation

Grease

or prepare with paper liners. Preheat oven
to
400\u00b0.
Beat sugar, sweet potatoes and margarine until
smooth.
Add
eggs
and blend well.
Sift together flour, baking
powder, spices and salt.
Add alternately with milk to sweet
potato mixture, stirring just to blend; do not over mix. Fold
in raisins and nuts.
Spoon into muffin cups. May be frozen and re-heated.
