Anita'S Hot Chicken Salad - cooking recipe
Ingredients

1 c. diced cooked chicken
1 c. cooked rice
1 can cream of chicken soup
2 hard-boiled eggs, chopped
1 small onion, chopped
1/2 c. chopped celery
1/2 c. mayonnaise
Ritz crackers
1/2 stick butter or margarine
salt and pepper to taste
Preparation

Cook chicken, rice and eggs.
Dice chicken and combine in a bowl with all other ingredients, except for crackers.
Mix well and add salt and pepper to taste.
Spread mixture into an 8 x 8-inch pan.
Crush Ritz crackers and cover mixture.
Pour 1/2 stick butter or margarine over crackers.
Bake at 350\u00b0 for 30 minutes.
Cut into squares and serve on lettuce leaves.
