Matzo Pancakes * - cooking recipe

Ingredients
    4 matzo
    5 eggs, separated
    1/2 c. matzo meal
    oil (for frying)
Preparation
    Soak broken up matzo in hot water; drain.
    Beat egg yolks well; add matzo.
    Continue beating.
    Add matzo meal; fold in beaten egg whites.
    Heat oil in frying pan.
    Drop large spoonfuls of batter into oil.
    Fry until brown on one side.
    Turn; fry until brown on other side.
    Drain on paper towels.
    Serve with applesauce or sprinkled with sugar.
