Quick Lime Torte - cooking recipe
Ingredients

3/4 c. vanilla wafer cookie crumbs, divided
3 egg yolks, beaten
1/4 c. lime juice
1 tsp. grated lime peel
1/2 c. sugar
1 1/2 c. plain yogurt
1 c. whipped cream, beaten with 2 Tbsp. sugar until stiff
Preparation

Lightly spray a small shallow glass dish with nonstick cooking spray.
Sprinkle dish with half the crumbs.
Mix together egg yolks, lime juice, peel and sugar in top of double boiler over boiling water.
Stir occasionally until thick.
Set mixture off heat.
Cool and add yogurt and whipped cream to cooled lime mixture.
Pour over crumbs into dish.
Top with remaining crumbs. Cover and freeze until firm.
Serve cut into squares.
