Chicken Fried Rice - cooking recipe

Ingredients
    2 Tbsp. oil, divided
    1 egg, slightly beaten
    1 bunch green onions, cut in 1-inch pieces
    5 1/2 c. cooked brown rice
    2 c. frozen peas, thawed
    2 c. cooked chicken
    1/4 c. soy sauce
    1/4 tsp. ginger
Preparation
    Heat 1 tablespoon of oil in large skillet.
    Cook egg for 1 minute until set, but moist.
    Remove to plate and cut in 1-inch strips. In remaining tablespoon of oil, stir-fry green onions for 2 minutes.
    Add rice, chicken, peas, soy sauce and ginger. Stir-fry 3 to 4 minutes.
    Add egg.
    Cook 1 minute.
    Serves 6.
