Lemon Chicken - cooking recipe

1 (3 lb.) whole roasting chicken
1 large lemon
lemon pepper
Preparation

Preheat oven to 375\u00b0. With a double-tined cooking fork, pierce lemon almost through all over, 20 to 30 times.
Set aside any juice that leaks out.
Rinse chicken; remove and discard fat. Place lemon and any juice in cavity of chicken; truss with string or metal skewers.
Season with lemon pepper.
Place chicken in small roasting pan; roast 70 minutes.
Remove from oven; let stand covered 10 to 15 minutes.
Makes 4 servings.
