Potato Doughnuts - cooking recipe

Ingredients
    1 c. hot mashed potatoes
    1 1/2 c. sugar
    1 c. buttermilk
    1/2 tsp. salt
    3 lightly beaten eggs
    1 tsp. nutmeg
    4 1/2 to 5 c. flour
    2 tsp. baking soda
    oil for deep frying
    powdered sugar
Preparation
    Beat together potatoes and sugar.
    Beat in buttermilk, salt and eggs.
    Sift nutmeg, flour and baking soda together and stir into potato mix to make a soft dough.
    Roll out on floured board and cut with doughnut cutter.
    Or mold into small \"meatballs\" to make bite-sized \"munchkins\".
    Fry until golden.
    Drain on paper towels. Sprinkle with sugar.
    Serve warm if possible.
    Makes approximately 3 dozen.
