Tomato Gravy - cooking recipe

Ingredients
    1/4 c. onion, chopped (optional)
    3 Tbsp. bacon drippings
    1 Tbsp. flour
    3 or 4 fresh tomatoes, peeled and chopped or 1 can tomatoes
    1 c. water
    salt and pepper to taste
Preparation
    Saute onion in bacon fat.
    Add flour and brown.
    Add tomatoes and their juices.
    Stir as gravy thickens.
    Add water, a little at a time, and cook longer until gravy is of desired consistency. Add salt and pepper to taste.
    Serve over rice or biscuits.
    This gravy is also good as a casserole sauce.
