Baked Squash Casserole - cooking recipe

Ingredients
    2 lb. zucchini or yellow summer squash
    salt and pepper to taste
    3 beaten eggs
    1/2 tsp. Tabasco sauce
    2 tsp. parsley flakes
    3 Tbsp. onion, chopped
    1/2 c. butter or margarine, melted
    2 c. cracker crumbs
Preparation
    Slice squash into 1/2-inch pieces.
    Boil 3 minutes or until tender.
    Drain; add onion and beaten eggs, mixed with seasonings. Melt butter and stir into cracker crumbs.
    Sprinkle over squash. Bake at 350\u00b0 for 35 to 40 minutes or until browned.
    Makes 6 servings.
