Grits Souffle - cooking recipe
Ingredients

1 c. grits
3 c. boiling water
1 1/2 tsp. salt
1 stick butter
4 eggs
1 c. milk
1 lb. sharp cheese, grated
Preparation

Add grits to boiling water and cook gently until done.
Add salt and butter; mix well to melt butter.
Thoroughly mix eggs with milk.
Add a little of the hot grits to egg-milk mixture; return mixture to hot grits and mix.
Stir in grated cheese.
Put mixture into greased baking dish and bake in slow oven (325\u00b0) for 45 minutes, or until browned on top and a knife inserted into center comes out clean.
