Corn Salsa - cooking recipe
Ingredients

1 lb. bag frozen (organic) corn, thawed
1/4 to 1/2 c. chopped cilantro
1/4 c. chopped basil
chopped red and/or green pepper
chopped sun-dried or regular tomatoes
chopped or minced garlic
chopped scallions or shallots
juice of 2 lemons or limes
olive oil
ground black pepper
Preparation

Combine and refrigerate. Serve with a simple green salad for a colorful, nutritious lunch!
