Armadillo And Rice - cooking recipe

Ingredients
    1 armadillo, dressed
    salt and pepper
    4 onions, chopped
    vegetable oil
    1 can mushrooms
    2 bay leaves
    1 garlic clove, sliced
    2 c. rice, uncooked
Preparation
    Boil armadillo in salted water until tender.
    Remove meat from bones and save the broth.
    In a large baking dish or Dutch oven, saute onions in oil until softened.
    Add the meat and cook for about 5 minutes.
    Add 6 cups broth, bay leaves, garlic, rice, salt and pepper.
    Stir and bake at 375\u00b0 at least 30 minutes or until rice is done.
