Rice With Spinach(Riso Con Spinaci) - cooking recipe

Ingredients
    1 lb. leaf spinach
    1/4 c. water
    1/4 c. butter
    3 Tbsp. olive oil
    1/2 small onion, chopped
    1 1/2 tsp. salt
    1/4 tsp. black pepper
    4 c. cooked rice
Preparation
    Cook 1 pound thoroughly
    washed
    and chopped fresh leaf spinach, in 1/4 cup water for
    5
    to
    6
    minutes.
    Drain well. Melt butter in skillet; add
    oil and saute onion until tender. Add spinach, salt, pepper
    and
    2
    tablespoons
    capers.
    Saute until heated thoroughly, about 4
    to 5 minutes.
    Add to cooked rice and toss gently.
    Serve hot.
    Makes 6 servings.
