Zucchini Muffins - cooking recipe
Ingredients

1 3/4 c. flour
3/4 c. sugar
1 1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
2 eggs
1 medium zucchini, shredded (2 c.)
1/3 c. salad oil
Preparation

Mix first 5 ingredients.
In medium bowl, beat eggs slightly. Stir in shredded zucchini and salad oil.
Stir egg mixture; add at once into flour mixture until flour is moistened (batter will be lumpy).
Spoon into cupcake pan lined with cupcake holders and bake at 400\u00b0 for 20 to 30 minutes.
