Country Breakfast - cooking recipe

Ingredients
    4 c. frozen hash brown potatoes
    1/2 c. chopped green pepper
    2 Tbsp. chopped onion
    1/3 c. margarine
    salt and pepper
    4 eggs
    1 c. (4 oz.) shredded sharp Cheddar cheese
Preparation
    In 10-inch skillet, cook potatoes in margarine until partially thawed.
    Add green pepper and onion and continue cooking until lightly browned.
    Season to taste.
    Break eggs over potato mixture. Cover; cook until eggs are done.
    Top with cheese.
    Cover; continue cooking until cheese is melted.
    Mushrooms or green chiles may be added.
    Yields 4 servings.
