Ingredients

2 c. coconut
2 c. cookie crumbs
3 Tbsp. butter, melted
1 c. whipping cream
1/2 pkg. coconut instant pudding mix
2 Tbsp. sherry
2 kiwifruit, sliced and peeled
2 Tbsp. lemon juice
4 Tbsp. apricot jam
Preparation

Combine cookie crumbs and melted butter; press into flan dish. Whip the cream until it begins to hold shape. Sprinkle with instant pudding and continue beating until mixture holds. Fold in sherry. Spoon the creamed mixture into the flan dish and smooth top. Arrange the sliced kiwifruit over the top in a circle. In a small glass dish, heat lemon juice and jam on High in microwave 1.5 minutes. Strain and allow to cool a little before pouring over the fruit. Chill well before serving.
