Stuffed Lettuce, Country Style - cooking recipe

Ingredients
    1 large head lettuce
    2 Tbsp. Roquefort cheese
    3 Tbsp. ground carrots
    1 Tbsp. chopped pimento
    2 Tbsp. chopped green pepper
    1 1/2 Tbsp. chopped green onion
    1 tsp. salt
    1/8 tsp. pepper
    1 tsp. lemon juice
    1/4 c. tomato catsup
Preparation
    Select a firm head of lettuce and remove the center leaving a good shell.
    Wash and drain the lettuce.
    After all the water is drained from the lettuce, chop the lettuce from the center very fine and mix with the remaining ingredients.
    Pack the mixture firmly but carefully into the lettuce shell.
    Wrap in waxed paper or cheesecloth and chill.
    Slice and serve with French dressing.
