Chicken In Wine Sauce A La Montessori - cooking recipe

Ingredients
    4 whole chicken breasts, halved and boned
    1 egg, beaten
    plain bread crumbs
    oil or margarine for frying
    1/2 lb. fresh mushrooms, sliced
    2 c. chicken broth
    2/3 c. dry sherry
    2 Tbsp. cornstarch
    1/2 c. grated Parmesan cheese
    8 oz. sliced Mozzarella cheese
Preparation
    Dip chicken in egg and roll in crumbs.
    Fry until brown. Arrange in shallow baking dish.
    Saute mushrooms; add broth and sherry.
    Thicken with cornstarch.
    Sprinkle Parmesan cheese over chicken and cover with Mozzarella cheese slices.
    Cover chicken with gravy and bake at 350\u00b0 for 30 to 40 minutes.
    Serves 6.
