Turkey Rice Soup - cooking recipe

Ingredients
    1/2 c. margarine
    1 large onion, diced
    1/2 green pepper, diced
    1 1/2 ribs celery, diced
    1 c. chopped fresh mushrooms
    1/2 to 1 c. flour
    8 c. hot chicken or turkey
    broth plus meat
    2 c. cooked rice or 1/2 c. uncooked
    1 c. half and half
    1/2 tsp. salt
    dash of pepper
    2 to 3 Tbsp. vermouth (optional)
Preparation
    Melt butter in large kettle over medium heat. Saute onion, pepper, celery and mushrooms until tender-crisp.
    Stir in flour. Do not brown.
    Slowly add broth.
    Cook and stir over medium heat until thickened.
    Cook 1 minute longer.
    Stir in rice and half and half.
    Heat to serving temperature. Blend in salt, pepper and vermouth.
    (Good way to use up last of Thanksgiving turkey.)
    I boil up all the bones and make my broth, plus the meat.
