Bean Soup - cooking recipe

Ingredients
    3 c. dried navy beans
    1 ham or 1/2 lb. salt pork
    1/2 c. chopped onion
    1/2 hot red pepper
    salt to taste
Preparation
    Cover beans with water and soak 15 hours in a cool place.
    Add meat, onion and pepper; bring to boiling.
    Cover and simmer 2 to 3 hours or until beans are mushy.
    Remove meat and cut into small pieces.
    Press remaining ingredients through a sieve or food mill; add meat.
    Add boiling water for consistency, if necessary.
    Salt to taste.
    Pour hot into hot jars leaving 1-inch headspace.
    Adjust caps, leaving 1-inch headspace.
    Process pints 1 hour and 15 minutes at 10 pounds pressure.
