1 c. sugar
3 c. grated carrots
1/2 c. apple juice
1/4 c. canola oil
4 egg whites
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 tsp. ground cinnamon
1 c. raisins
Preparation

Preheat oven to 350\u00b0.
Sift dry ingredients; stir in remaining ingredients.
Bake 25 to 30 minutes in paper-lined muffin tins. Yields 12 servings, 107 calories and 2.6 g fat each.
