Eggplant Casserole - cooking recipe

Ingredients
    2 medium eggplants, peeled and chopped
    4 tomatoes, chopped
    2 green peppers, thinly sliced
    2 onions, sliced into rings
    1/2 tsp. salt
    1/2 tsp. pepper
    2 Tbsp. oil
    1 c. bread crumbs
    2 Tbsp. tapioca
    1/2 lb. cheddar cheese, grated
Preparation
    Layer half the eggplant, tomatoes, peppers, onions, salt, pepper, oil, and all the bread crumbs in a greased shallow 2 quart baking dish.
    Repeat layers with remaining ingredients. Sprinkle with tapioca.
    Bake at 350\u00b0 covered with foil for 1 hour. Top with cheese.
    Bake again until cheese melts.
    Serves 8.
