Warm Beet Salad - cooking recipe
Ingredients

2 cans sliced beets
3 cloves garlic, minced
1 Tbsp. margarine
1/2 medium green pepper, diced
1/2 medium red pepper, diced
1/2 medium cucumber, peeled, seeded and diced
1/2 c. onion, chopped
1/4 c. olive oil
2 Tbsp. lemon juice
2 Tbsp. white wine vinegar
1 Tbsp. capers, coarsely chopped
1 tsp. Dijon style mustard
salt and pepper to taste
Preparation

In a saucepan, melt margarine.
Add peppers, cucumber and onion.
Cook until tender, about 5 minutes.
Add remaining ingredients and mix well.
Arrange beets on 4 individual plates and drizzle with vegetable mixture.
Serve warm.
Serves 4.
