Quick Pork Chop And Rice Casserole - cooking recipe

Ingredients
    6 pork chops
    2 cans tomatoes
    2 medium onions
    4 green peppers
    3/4 c. to 1 c. dry long grain rice
    2 Tbsp. butter
    1/2 c. shortening
Preparation
    Salt and pepper pork chops.
    Lightly flour and fast fry until golden brown in 1/2 inch shortening.
    In baking dish melt 2 tablespoons butter.
    Sprinkle 3/4 cup or 1 cup rice over buttered dish.
    Slice or chop 2 green peppers, 1 onion and 1 can tomatoes over rice.
    Place browned pork chops over mixture.
    Slice remaining pepper, onion and tomatoes over pork chops.
    Cover. Bake in 350\u00b0 oven for 45 minutes.
    Serves six.
