Eggplant Caviar - cooking recipe

Ingredients
    1 lg. eggplant
    1/2 c. olive oil
    Med. onion minced
    1 green pepper, chopped
    2 cloves garlic crushed
    1/2 tsp. salt
    2 Tbsp. white vinegar
    1 Tbsp. lemon juice
Preparation
    Bake eggplant for 1 hour at 400 degrees.
    Peel and chop. Saute other ingredients in a large skillet.
    Add to the eggplant and simmer in a skillet about 15 minutes until mixture is thick. Chill.
    Serve with crackers or pita chips.
