Pasta Picante(Fettuccine With Vegetable Sauce) - cooking recipe

Ingredients
    6 bacon strips, diced
    1 medium onion, chopped
    1/2 green or red bell pepper, chopped
    1/2 c. fresh basil or 1 Tbsp. dry basil leaves
    2 Tbsp. olive or vegetable oil
    1/4 c. grated Parmesan
    3 cloves garlic, minced
    1 large zucchini, cubed
    1 (10 oz.) can Ro-Tel tomatoes and green chilies, diced
    1/2 c. chopped parsley
    1/2 tsp. salt
    12 oz. fettuccine, cooked and drained
Preparation
    In a large frying pan, cook bacon until crisp.
    Remove and set aside.
    Drain all but 2 tablespoons of the fat from the pan.
    Add garlic and the onion; cook until translucent.
    Add the zucchini and peppers; stir over medium-high heat until tender-crisp, about 2 minutes.
    Add tomatoes and green chilies, basil, parsley and oil.
    Cook, stirring frequently, until hot.
    Add salt.
    In heated serving bowl, toss fettuccine with vegetables and bacon; sprinkle with Parmesan and serve immediately.
    Makes 4 servings.
