Fiesta Corn Bread - cooking recipe

1/4 c. vegetable shortening or oil
1 c. all-purpose flour
1 c. Aunt Jemima enriched yellow corn meal
4 tsp. baking powder
2 tsp. sugar (optional)
1/2 tsp. salt (optional)
1 1/2 c. (6 oz.) shredded Cheddar cheese
1 (8 1/2 oz.) can cream-style corn
1 (4 oz.) can chopped hot or mild green chillies, drained
1/2 c. milk
2 eggs, beaten
Preparation

Heat oven to 400\u00b0 in 8 or 9-inch square baking pan or 10-inch ovenproof skillet.
Melt shortening in oven; tilt pan to coat bottom evenly.
