Chicken-Egg-Lemon Soup(From Greece: Soupa Avgolemono) - cooking recipe

Ingredients
    1 chicken
    2 qt. water
    1 large onion
    2 stalks celery
    1 carrot
    salt and pepper
    1 c. rice
    2 eggs, at room temperature
    1/3 c. fresh lemon juice
Preparation
    Boil the water.
    Add chicken, onion, celery, carrot, salt and pepper.
    Cover and simmer for 2 hours.
    Strain the broth.
    Remove bones and the skin.
    Chop the meat and the vegetables.
    Add to the boiling broth and the rice.
    Cover and cook 20 minutes or until tender.
    Salt to taste.
