Three Tomato Tart - cooking recipe

Ingredients
    pastry for a single crust pie
    3 Tbsp. grated Parmesan cheese
    2 egg whites
    1 c. low-fat Ricotta cheese
    2 garlic cloves, minced
    1 Tbsp. thyme
    2 large tomatoes, sliced
    5 yellow or cherry tomatoes, sliced
    2 red cherry tomatoes, sliced
    2 tsp. thyme
    1 Tbsp. olive oil
Preparation
    Prepare pastry for single crust, place in a 10-inch tart pan. Trim pastry even with rim of pan.
    Do not prick.
    Line pastry shell with a double thickness of foil.
    Bake at 450\u00b0 for 5 minutes.
    Remove foil, bake 7 minutes or until done.
    Remove from oven.
    Reduce temperature to 325\u00b0.
