Double Crusted Lemon Pie - cooking recipe
Ingredients

1 1/4 c. sugar
2 Tbsp. flour
1/8 tsp. salt
1 Tbsp. grated lemon rind
3 eggs, well beaten
1 medium lemon, sliced thin
1/2 c. water
1/4 c. soft butter
Preparation

Mix all ingredients together.
Pour into an unbaked pie shell. Place top crust and flute the edges.
Cut vent hole in top crust. Brush top crust with egg and sprinkle with sugar.
Bake at 425\u00b0 for 10 minutes.
Reduce heat to 350\u00b0 and bake for 40 minutes.
