Red Beans And Rice - cooking recipe

Ingredients
    6 oz. Low-fat smoked sausage
    1 c. onion, chopped
    3/4 c. Green pepper chopped
    1 clove garlic, minced
    3 (16 oz.) cans red beans, drained
    1 (14 1/2 oz.) can stewed tomato
    1 1/2 c. water
    1 can (6 oz.) can tomato sauce
    1/4 tsp. oregano
    1/4 tsp. thyme
    1/4 tsp. hot sauce
    1 bay leaf
    4 c. Rice, cooked
Preparation
    Coat a Dutch oven with cooking spray.
    Place over medium heat, add sliced smoked sausage, onion, green pepper and garlic; saute until tender.
    Add beans and next 7 ingredients (stewed tomatoes to bay leaf).
    Cover, reduce heat to simmer for 20 minutes.
    Remove bay leaf and serve over rice with additional hot sauce.
