Apple Harvest Coffee Cake - cooking recipe

Ingredients
    4 c. diced apples
    2 c. sugar
    3 c. flour
    2 tsp. baking soda
    1 tsp. nutmeg
    1 tsp. cinnamon
    2 eggs
    1 c. cooking oil
    1 tsp. vanilla
    1/2 c. chopped walnuts
Preparation
    Mix apples and sugar together; let set for 1 hour.
    Sift dry ingredients together.
    Beat eggs and add oil, vanilla and apple mixture.
    Add flour mixture and chopped nuts.
    Bake in a large greased Bundt pan for 1 hour at 350\u00b0.
    Best made at least 1 day in advance because flavor is much better the second day.
    Sprinkle cool cake with confectioners sugar, if desired.
